You can immediately tell Pho Bistro is a fairly popular place. I mean, when I visited, there were still a couple hours before dinner time, and many chairs were already filled.
On some visits to Asian eateries, I like to try the rice dishes, but this time I was definitely in the mood for some good pho. I didn’t like any of the ones on the menu, so I ordered the make your own pho with eye-of-round steak and flank steak. The order returned fairly fast, which was rather impressive, considering the crowd and all.
While the pho only seemed to include one of the meats I requested, the meat was thinly sliced and was well-cooked in the hot broth.
It wasn’t the best pho I've ever had, but it certainly wasn't bad. I just feel like the broth could have had more flavor. What I really hate is when the broth is greasy, but Pho Bistro's broth is nice and clean.
The portion was generous and decently priced at around $8 a bowl. The place is clean, has a nice atmosphere and is decorated a bit more modernly then most pho joints.
If I’m in the area, I may stop by again for carry out or a quick bite with friends. As far as good service goes, it's hit and miss. The friendliness of the staff varied from employee to employee, so I can't really say.
